What you need

tsp table salt

lb carrot

clove garlic clove

tbsp unsalted butter
tbsp honey

tbsp olive oil

cup cream cheese

tsp chipotle powder

cup scallion
Instructions
1️⃣Preheat the oven to 425°F. 2️⃣Make the butter mixture: Add 2 tbsp butter, the olive oil, one clove of minced garlic, salt, chipotle powder, paprika, and cumin to a small bowl and mix to combine. 3️⃣Add the peeled carrots to a large casserole dish, add the butter mixture, and toss to coat. Place in the oven for 25 minutes. 4️⃣While the carrots roast, make the honey glaze: Add the remaining melted butter (0.5 tbsp), remaining minced garlic (1 clove), and the honey to a small bowl and mix. 5️⃣Next, remove the carrots from the oven, add the honey mixture and toss again. Place the carrots back in the oven for 10-15 minutes, or until tender. After they are done, place the dish under the broiler for 5 minutes or more to brown the tops. 6️⃣While the carrots roast, make the scallion cream: Add the whipped cream cheese, chopped scallions, and 1 clove of garlic to a bowl and whisk to combine. 7️⃣To serve: Spread the scallion cream onto a plate, top with the roasted carrots, then add the parsley and walnuts. Finish the dish by drizzling the carrots with the honey and butter mixture from the bottom of the casserole dish.View original recipe
