What you need

clove garlic clove

cup plain greek yogurt

lemon zest
tsp salt

tsp pepper

tbsp olive oil

fl oz fresh lemon juice

oz feta

tbsp dried rosemary

tsp dried dill
lb red potato
oz walnut pieces
tsp dried oregano

bunch scallion

Instructions
1. Preheat the oven to 425°F. 2. Add the potatoes to a pan with cold water. Add a generous pinch of salt and bring the water to a boil, then boil for 10 minutes. Drain the water and discard. 3. While the potatoes are boiling, add a sheet pan to the oven to allow it to heat up. When the potatoes are ready, remove the pan from the oven, drizzle a tablespoon of olive oil over the bottom, then add the potatoes along with the onions, the second tablespoon of olive oil, rosemary, salt, oregano, dill and pepper. Toss to combine. Bake for 40-45 minutes, tossing a couple times while cooking. 4. While the potatoes are cooking, make the whipped feta. Add the yogurt, feta, olive oil, salt, lemon juice, lemon zest, garlic and pepper to a food processor and process until smooth. 5. Place the dip in a shallow bowl, add the roasted potatoes and onions to the top. Garnish with crushed walnuts, chopped scallions and honey.View original recipe
