CRUNCHY SPICED CUCUMBER SALAD WITH CREAMY HERBED WHIPPED RICOTTA & FETA

1. Add the quartered cucumbers and 1 tablespoon of salt to a bowl and allow to sit for 15 minutes.
2. Then drain the liquid, rinse the cucumbers, pat them dry, and place them in a new bowl. Add the red pepper flakes, oregano, sesame seeds, cumin, and olive oil. Toss to combine.
3. To make the whipped ricotta and feta, add the ricotta cheese, feta cheese, Greek yogurt, 1/4 cup fresh dill, and zest of 1/2 lemon, along with salt and pepper to taste, to a food processor. Process until mostly smooth (it’s okay to have a few feta chunks).
4. Serve the spiced cucumbers over the whipped ricotta and feta dip. Top with 2 tablespoons chopped chives, 2 tablespoons chopped dill, 1/4 cup toasted pine nuts, zest of the remaining half of a lemon, and a drizzle of honey.
