Chewy Date Snickers Sandwiches

Make the filling by whisking together the whipped topping, yogurt, peanut butter, and maple syrup until smooth and creamy. Set aside.

Open the dates and lay them out on a parchment-lined sheet pan. Cover with more parchment paper and flatten using a rolling pin or heavy pan to create a large rectangle (8x4). Patch any holes with small pieces of date and re-roll. Cut into two equal squares (4x4).

Place one rectangle on a parchment-lined pan and spread the filling over it. Top with the second square and gently press down. Freeze for at least 5-6 hours or overnight.

Slice the large square into 8 smaller squares and return to the freezer until ready to dip.

Melt the chocolate and coconut oil together in the microwave in 30-second intervals, stirring after each interval until melted.

Dip each sandwich into the melted chocolate to cover half, then place on a lined sheet pan. Sprinkle the tops with crushed peanuts and freeze for 10 minutes until the chocolate hardens.
