tsp paprika

tbsp olive oil

tbsp corn starch

tbsp avocado oil

cup pistachio nuts

tsp dried oregano

tsp lemon juice

tsp lemon zest

tsp onion powder

Instructions
1. Preheat the oven to 425°F (220°C) and place a sheet pan in the oven while it preheats. 2. Mix 3/4 teaspoon of salt, paprika, onion powder, and oregano in a small bowl. 3. Cut the carrots into fries, then add to the hot sheet pan with the avocado oil and the spice mixture. Toss to coat then bake for 30-35 minutes, flipping halfway. 4. While the carrots roast, prepare the ricotta mixture by combining ricotta, honey, 1/4 teaspoon salt, pepper to taste and lemon juice in a small bowl. Mix well and set aside. 5. Make gremolata by processing pistachios and fresh basil in a food processor until a paste forms. 6. Mince the garlic, then combine the processed pistachio mixture with remaining salt, pepper to taste, olive oil, garlic, and lemon zest in a bowl. Mix well and set aside. 7. Spread ricotta mixture onto a serving plate, then top with roasted carrots followed by the gremolata, chopped scallions, crumbled feta cheese, and a drizzle of honey if desired.
