1. Lay out a slice of prosciutto, then overlap with a second slice. 2. Spread a layer of 1/2 tbsp or so of ricotta cheese on each slice. Sprinkle a little of the blue cheese crumbles on top of the ricotta. Top with a little arugula and an apple slice. Roll the prosciutto tightly, starting at one end, to create a 'roll.' Slice the roll in half. Repeat with the remaining ingredients. 3. Plate the rolls, drizzle with balsamic glaze and top with crushed walnuts, if desired.
